The plant from which the vanilla comes is the Vanilla planifolia orchid. This plant requires specific climatic conditions, such as a warm and humid environment, in order to thrive. Pollination is a key step in the growing process; in Madagascar, the flowers are pollinated by hand because natural pollinators are not available. Once harvested, vanilla pods undergo a thorough fermentation and drying process that can take several months. This process is essential for the development of the characteristic flavour and aroma that are typical of Bourbon vanilla. The result is a rich, creamy and sweet aroma, ideal for a wide range of culinary applications - from desserts and baked goods to savoury dishes.
