What does it mean that the protein is hydrolyzed? Through the process of hydrolysis, protein bonds are cleaved by protease enzymes (protein-splitting enzymes) into long-chain amino acids. These amino acids are called polypeptides. This is an enzymatic process of hydrolysis - pre-digestion ("pre-chewing"). Its product is a protein that is perfectly usable by the body in the form of peptides, which include: oligopeptides (have more than 12 amino acids), dipeptides (have 2 amino acids), tripeptides (have 3 amino acids), tetrapeptides (have 4 amino acids), pentapeptides (have 5 amino acids), etc. The BV bioavailability index is 104 - 107.
Degree of hydrolysis - the most important data that determines the quality of the hydrolysed protein.
